Moroccan Cous cous

This Moroccan cous cous is so cheap and easy and packed with healthy vegetables. I make this for BBQs or to have for dinner with steak and salad.

 

Spray a baking tray with oil & bake the following ingredients for 15 minutes at 180c:

1 red onion sliced into wedges

2 cloves of garlic

1tsp ground cumin

1/2 tsp ground cinnamon

1 sliced zucchini

40g pin nuts

after 10 minutes add:

400g canned tomato

400g canned chick peas drained

cook for a further 10 minutes covered in foil

 

Meanwhile, place 1 cup of cous cous into a bowl and just cover with water. Allow to sit to allow the cous cous to absorb the water. I do this immediately after the veges first go in the oven and just leave the cous cous to sit there until the veges are ready.

Break up the cous cous with a fork, mix the baked ingredients in with the cous cous and add a bunch of chopped coriander or parsley.

Leftovers keep well in the fridge for a couple of days.
